Ingredients

For the Cookies
  • 1 cup Unsalted Butter Adds richness and moisture; use salted butter if unsalted is unavailable; reduce added salt.
  • 1 cup Granulated Sugar Provides sweetness and helps create a soft texture; can be replaced with coconut sugar for a deeper flavor.
  • 1 cup Light Brown Sugar Enhances depth of flavor and moisture; dark brown sugar can be used for a stronger molasses taste.
  • 1 large Large Egg Binds ingredients and adds structure; aquafaba can be used as a vegan substitute.
  • 1 tsp Vanilla Extract Introduces aromatic sweetness; consider using almond extract for variation.
  • 2 cups All-Purpose Flour Provides structure to the cookies; gluten-free flour can be used for a gluten-free version.
  • 1 tsp Baking Soda Helps cookies rise and achieve a light texture; baking powder can be substituted but adjust quantity.
  • 0.5 tsp Salt Balances sweetness; use kosher salt for a more robust flavor.
For the Filling
  • 8 oz Cream Cheese Creates the creamy cheesecake filling; mascarpone cheese can be substituted for a different flavor.
  • 0.5 cup Powdered Sugar Sweetens filling and helps achieve a smooth texture; use less for a less sweet filling or a sugar substitute to make it healthier.
For the Fresh Topping
  • 1 cup Fresh Strawberries Offers fruity flavor and moisture; frozen strawberries can work; ensure to drain excess moisture after thawing.
