Preparation
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, combine softened cream cheese, powdered sugar, and 1 teaspoon of vanilla extract until smooth.
- In a large bowl, cream together softened unsalted butter, granulated sugar, and light brown sugar until light and fluffy.
- Beat in the large egg and the remaining teaspoon of vanilla extract until well combined.
- In another bowl, whisk together all-purpose flour, baking soda, and salt, then gradually mix into wet ingredients until just combined.
- Gently fold in diced fresh strawberries.
- Scoop portions of dough onto the baking sheets, leaving space between them, and fill each with cream cheese filling.
- Bake for 12-15 minutes until edges are lightly golden and centers are still soft.
- Cool cookies on baking sheets for about 5 minutes, then transfer to wire racks to cool completely. Optionally, top with additional diced strawberries and powdered sugar.
