Preparation
- Thaw the puff pastry at room temperature for 30-60 minutes, or in the refrigerator overnight.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Combine softened cream cheese, white sugar, and vanilla in a bowl. Beat until smooth, then fold in half of the diced strawberries and optional red food coloring.
- Roll out the puff pastry on a floured surface to 1/4 inch thick and cut heart shapes using a cookie cutter.
- Fill the center of each heart with cream cheese filling and top with remaining strawberries.
- Mix the egg and cold water for the egg wash and brush the edges of each pastry.
- Bake for 12-15 minutes, rotating halfway, until golden brown.
- Cool on a wire rack for 5-10 minutes before serving.
