For the Egg Wash

Method
 

Preparation
  1. Thaw the puff pastry at room temperature for 30-60 minutes, or in the refrigerator overnight.
  2. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Combine softened cream cheese, white sugar, and vanilla in a bowl. Beat until smooth, then fold in half of the diced strawberries and optional red food coloring.
  4. Roll out the puff pastry on a floured surface to 1/4 inch thick and cut heart shapes using a cookie cutter.
  5. Fill the center of each heart with cream cheese filling and top with remaining strawberries.
  6. Mix the egg and cold water for the egg wash and brush the edges of each pastry.
  7. Bake for 12-15 minutes, rotating halfway, until golden brown.
  8. Cool on a wire rack for 5-10 minutes before serving.
