Step-by-Step Instructions for Sweet and Spicy Vegan Pineapple Rice
  1. In a medium saucepan, heat 1 tablespoon of vegetable oil over medium heat. Add 2 cloves of minced garlic and 1 tablespoon of minced ginger. Sauté for about 5 minutes until fragrant.
  2. Add 1 cup of uncooked jasmine rice to the saucepan, stirring continuously for roughly 2 minutes until it develops a slight golden color.
  3. Stir in 1 cup of diced pineapple, 2 tablespoons of sriracha, 2 tablespoons of coconut aminos, and 1 tablespoon of sugar. Sauté for an additional minute.
