Ingredients
  

Marinade
  • 1/4 cup sweet chili sauce try sugar-free options if desired
  • 2 tablespoons soy sauce substitute with gluten-free tamari for gluten-free version
  • 1 tablespoon olive oil can be replaced with avocado oil
  • 1 tablespoon fresh ginger use ground ginger if fresh is unavailable
  • 2 cloves garlic substitute with garlic powder if needed
Bowl Ingredients
  • 2 fillets skin-on salmon ensure best texture
  • 1 cup white rice can use brown rice for more nutrition
  • 1 medium avocado slice fresh before serving
  • 1-2 carrots julienne for added crunch
  • 4-5 radishes slice thinly
  • 1 cup red cabbage can substitute with green cabbage
  • 2 scallions chives can be used as a replacement
  • 2 tablespoons sesame seeds for garnish

Method
 

Preparation
  1. Rinse 1 cup of white rice under cold water until the water runs clear, then combine with 2 cups of water and a pinch of salt in a medium pot. Bring to a boil, then reduce to low, cover, and simmer for about 15 minutes.
  2. In a small mixing bowl, whisk together the marinade ingredients: 1/4 cup sweet chili sauce, 2 tablespoons soy sauce, 1 tablespoon olive oil, 1 tablespoon freshly grated ginger, and 2 minced garlic cloves.
  3. Place 2 skin-on salmon fillets into a shallow dish or resealable plastic bag and pour the marinade over them. Let them marinate in the refrigerator for at least 30 minutes.
  4. Prep the veggies by julienning 1-2 carrots, slicing 4-5 radishes, shredding 1 cup of red cabbage, and chopping 2 scallions. Also slice an avocado and set aside.
  5. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and place the marinated salmon skin-side down on it. Bake for 12-15 minutes until cooked through.
  6. In serving bowls, layer the fluffy rice as base, place the baked salmon on top, and artfully arrange the prepared vegetables around the salmon. Finish each bowl with a sprinkle of sesame seeds.

Notes

Marinate the salmon for at least 30 minutes but no longer than 24 hours. Store leftover bowls in an airtight container for up to 3 days, separating salmon and veggies from rice to maintain texture.
