Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) so it’s nice and hot by the time you're ready to roast.
  2. Start by peeling the sweet potatoes and cutting them into 1-inch cubes, ensuring they will roast evenly. Next, trim the ends off the green beans.
  3. In a large mixing bowl, combine the prepared sweet potatoes and green beans. Drizzle with extra virgin olive oil, then sprinkle in the garlic powder, onion powder, smoked paprika, salt, and pepper. Mix everything well.
  4. Spread the tossed vegetables evenly across a baking sheet, making sure they lie flat and not overcrowded.
  5. Place the baking sheet in the preheated oven and roast the vegetables for about 25-30 minutes. Stir the mix halfway through for even cooking.
  6. Once the sweet potatoes are golden and fork-tender, remove the tray bake from the oven. Drizzle fresh lemon juice over the roasted vegetables and sprinkle with Parmesan cheese if desired.
