Ingredients

For the Jam
  • 3 cups Fresh blackberries Ripe blackberries are ideal, but frozen can work too.
  • 1 cup Bourbon Can substitute with vanilla extract or apple cider for a non-alcoholic version.
  • 1 tablespoon Vanilla extract Consider using vanilla bean or omit if you prefer a lighter taste.
  • 1 cup Sugar Honey can be substituted, but sweetness levels may need adjusting.
  • 2 tablespoons Lemon juice Fresh juice is preferable, though bottled is acceptable.
  • Pectin The natural pectin in blackberries helps thicken the jam.

Equipment

  • Medium saucepan
  • Potato masher
  • Sterilized jars

Method

Step-by-Step Instructions
  1. Start by gathering all your ingredients: ripe blackberries, sugar, lemon juice, bourbon, and vanilla extract. Rinse the blackberries under cold water to remove any debris, then gently pat them dry.
  2. In a medium saucepan, combine the prepared blackberries, sugar, and lemon juice over medium heat. Cook for about 5 minutes or until the sugar dissolves and the blackberries soften.
  3. Use a potato masher or fork to gently mash the blackberries, breaking them down to release more juice. Continue mashing until you reach your desired consistency.
  4. Pour in the bourbon and add the vanilla extract, stirring well. Simmer for another 15 to 20 minutes, stirring frequently.
  5. To test for doneness, spoon a small amount onto a cold plate. If it holds its shape, it’s ready; if not, simmer a bit longer.
  6. Pour the jam into sterilized jars while it’s still hot, leaving about half an inch of headspace. Seal tightly and allow to cool.

Notes

For a thicker jam, cook longer until it coats the back of a spoon. Always use sterilized jars to prevent spoilage.
