- Start by gathering all your ingredients: ripe blackberries, sugar, lemon juice, bourbon, and vanilla extract. Rinse the blackberries under cold water to remove any debris, then gently pat them dry.
- In a medium saucepan, combine the prepared blackberries, sugar, and lemon juice over medium heat. Cook for about 5 minutes or until the sugar dissolves and the blackberries soften.
- Use a potato masher or fork to gently mash the blackberries, breaking them down to release more juice. Continue mashing until you reach your desired consistency.
- Pour in the bourbon and add the vanilla extract, stirring well. Simmer for another 15 to 20 minutes, stirring frequently.
- To test for doneness, spoon a small amount onto a cold plate. If it holds its shape, it’s ready; if not, simmer a bit longer.
- Pour the jam into sterilized jars while it’s still hot, leaving about half an inch of headspace. Seal tightly and allow to cool.
