- In a large mixing bowl, combine the ground beef, crushed corn tortilla chips, finely diced onion, and green bell pepper. Add the whisked eggs, Rotel tomatoes, drained corn, taco seasoning, and 1 cup of grated cheese. Mix until just combined.
- Transfer the mixture into a 9x5-inch loaf pan, shaping it into a loaf. Ensure the top is smooth and create a slight well around the edges.
- Bake for 50 minutes. Remove from the oven and top with remaining grated cheese and optional taco sauce. Bake for an additional 10-15 minutes until cheese is bubbly.
