  • 900 g Ground Beef (80% lean) Can substitute with ground turkey or chicken.
  • 150 g Corn Tortilla Chips (crushed) Using baked chips can lower calories.
  • 1 small Yellow Onion (finely diced) Shallots can be used for milder flavor.
  • 1 Green Bell Pepper (finely diced) Red or yellow peppers can be used for sweetness.
  • 2 large Eggs (whisked) Flaxseed meal can be used for vegan option.
  • 284 g Rotel Tomatoes Regular canned diced tomatoes can be substituted.
  • 113 g Canned Corn (drained) Fresh corn can be used if desired.
  • 1 packet Taco Seasoning Homemade taco seasoning can be an alternative.
  • 150 g Shredded Cheddar or Pepper Jack Cheese (grated, divided) Mozzarella or dairy-free cheese can be used.
For the Topping
  • 80 ml Red Taco Sauce (optional) Salsa can be used for a fresh twist.
  • 30 g Cilantro or Parsley (for garnish) Skip if a milder taste is preferred.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather all ingredients and have a large mixing bowl ready.
  2. In a large mixing bowl, combine the ground beef, crushed corn tortilla chips, finely diced onion, and green bell pepper. Add the whisked eggs, Rotel tomatoes, drained corn, taco seasoning, and 1 cup of grated cheese. Mix until just combined.
  3. Transfer the mixture into a 9x5-inch loaf pan, shaping it into a loaf. Ensure the top is smooth and create a slight well around the edges.
  4. Bake for 50 minutes. Remove from the oven and top with remaining grated cheese and optional taco sauce. Bake for an additional 10-15 minutes until cheese is bubbly.
  5. Remove from oven and tent loosely with aluminum foil. Let it rest for 10 minutes before garnishing with chopped cilantro and serving.
