Step-by-Step Instructions
  1. In a skillet over medium heat, add the ground beef and cook for 5–7 minutes until browned. Add taco seasoning and a splash of water; let simmer for 2 minutes and cool.
  2. In a large pot, boil water with a pinch of salt. Add rotini pasta and cook for 8–10 minutes until al dente. Drain and rinse under cold water.
  3. In a mixing bowl, combine cooled pasta, seasoned beef, diced tomatoes, onion, corn, bell pepper, and jalapeño. Gently fold together.
  4. Drizzle Catalina dressing over the mixture and toss gently to coat.
  5. Fold in crushed Nacho Cheese Doritos just before serving to maintain crunch.
  6. Serve garnished with uncrushed Doritos and fresh lettuce if desired.
