Step-by-Step Instructions
  1. Cook the rice according to package instructions. Stir in lime juice and chopped cilantro before finishing.
  2. In a large skillet, heat olive oil and brown the ground beef or turkey for 5-7 minutes.
  3. Sprinkle taco seasoning over the meat and add water. Stir and let simmer for 3 minutes.
  4. Add diced bell pepper, corn, and black beans to the skillet. Cook for another 3-4 minutes until the pepper is tender.
  5. Fold in the cooked rice until well combined and warm through.
  6. Serve in bowls and top with salsa and shredded cheese. Add extra toppings if desired.
