Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
  2. Whisk together the flour, baking soda, and salt in a bowl and set aside.
  3. Beat butter and sugar together until light and fluffy.
  4. Add eggs one at a time, mixing well, then fold in mashed bananas and vanilla.
  5. Gradually add dry ingredients to the wet mixture until just combined.
  6. Divide batter and mix in gel food coloring.
  7. Layer the colored batter into the prepared loaf pan, sprinkling rainbow sprinkles on top.
  8. Gently swirl the batter with a butter knife.
  9. Bake for 50-60 minutes, checking for doneness after 50 minutes.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack.
