- Soak the Medjool dates in hot water for about 10 minutes to soften.
- Line a loaf pan with parchment paper for easy removal.
- Blend soaked dates and peanut butter in a food processor until smooth.
- Add almond flour to the date-peanut butter mixture and blend again until combined.
- Press the nougat mixture firmly into the prepared loaf pan.
- Spread the reserved date caramel over the nougat layer and sprinkle roasted peanuts on top.
- Freeze the assembled bars for 60-90 minutes until firm.
- Melt dark chocolate chips with coconut oil in the microwave until smooth.
- Coat the frozen bars with the melted chocolate mixture and return to the freezer for another 10-15 minutes.
