Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil over medium heat. Add one chopped onion and sauté for 5 minutes until translucent. Add 3 minced garlic cloves and one chopped bell pepper, and sauté for 3 minutes.
  2. Stir in 4 cups of fresh spinach and 2 cups of chopped kale. Cook for 4 minutes until wilted.
  3. Sprinkle in 1 teaspoon of cumin and 1 teaspoon of paprika, mixing well and stirring frequently for 2 minutes.
  4. Create four small wells in the mixture and crack an egg into each well. Cover and cook on low for 5-7 minutes until egg whites are set.
  5. Sprinkle crumbled feta cheese and fresh herbs over the top, add chili flakes, and let sit for a minute before serving.
