Step-by-Step Instructions for Voodoo Egg Rolls
  1. In a large mixing bowl, combine shredded chicken, cream cheese, diced sausage (if using), green onions, cheddar cheese, hot sauce, and Cajun seasoning. Mix well until all ingredients are evenly incorporated.
  2. Lay an egg roll wrapper on a clean surface with a corner pointing toward you. Spoon about 2 tablespoons of the filling onto the bottom corner, fold that corner over the filling, tuck in the sides tightly, and roll it up, sealing the edge with a bit of beaten egg.
  3. In a deep skillet or fryer, pour in about 2 inches of vegetable oil and heat it to 350°F (175°C). Prepare a plate lined with paper towels to drain the fried rolls.
  4. Carefully add the egg rolls to the hot oil in batches, frying each for about 3–4 minutes until golden brown and crispy. Use a slotted spoon to remove them and place them on the prepared paper towels.
