Step-by-Step Instructions for Voodoo Egg Rolls
- In a large mixing bowl, combine shredded chicken, cream cheese, diced sausage (if using), green onions, cheddar cheese, hot sauce, and Cajun seasoning. Mix well until all ingredients are evenly incorporated.
- Lay an egg roll wrapper on a clean surface with a corner pointing toward you. Spoon about 2 tablespoons of the filling onto the bottom corner, fold that corner over the filling, tuck in the sides tightly, and roll it up, sealing the edge with a bit of beaten egg.
- In a deep skillet or fryer, pour in about 2 inches of vegetable oil and heat it to 350°F (175°C). Prepare a plate lined with paper towels to drain the fried rolls.
- Carefully add the egg rolls to the hot oil in batches, frying each for about 3–4 minutes until golden brown and crispy. Use a slotted spoon to remove them and place them on the prepared paper towels.
- Once all the Voodoo Egg Rolls are fried and slightly cooled, arrange them on a serving platter and pair with your favorite dipping sauces.
