  1. Prepare the cabbage by removing outer leaves, cutting it into quarters, and slicing into 1/4-inch thick pieces.
  2. Rinse the sliced cabbage under cold water and dry completely. Sprinkle with sea salt and let sit for 5 minutes.
  3. Heat olive oil in a frying pan over medium heat. Sauté garlic for 1-2 minutes until lightly golden.
  4. Remove from heat and stir in sherry vinegar, smoked paprika, and ground cumin to prepare the dressing.
