Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F).
  2. Grease your baking pan with olive oil or non-stick spray and line it with parchment paper.
  3. Combine the grated zucchini and carrot in a mixing bowl, squeezing out excess moisture from the zucchini.
  4. Add the finely chopped onion, minced garlic, and optional fresh herbs to the vegetables and toss well.
  5. In another bowl, whisk together the eggs, olive oil, and grated cheddar cheese until smooth.
  6. Pour the egg mixture into the vegetable mixture and stir gently until well combined.
  7. Gradually mix in the self-raising flour, incorporating gently, then season with salt and pepper.
  8. Pour the mixture into the prepared baking pan and spread it evenly with a spatula.
  9. Bake for 30–35 minutes until golden brown and a toothpick comes out clean.
  10. Let it cool in the pan for a few minutes before slicing into squares.
