  2. Grate one medium zucchini using a box grater and squeeze out excess moisture using a clean kitchen towel.
  3. In a large mixing bowl, combine the zucchini, almond flour, eggs, baking powder, garlic powder, onion powder, salt, and pepper. Mix gently until a dough forms.
  4. Divide the dough into 4-6 portions, roll each into a ball, and poke a hole in the center to shape them into bagels.
  5. If desired, sprinkle shredded cheese, sesame seeds, or poppy seeds on top of each bagel.
  6. Transfer the bagels to the baking tray and bake for 25-30 minutes, or until golden brown.
