- Preheat your oven to 375°F (190°C) and line a baking tray with parchment paper.
- Grate one medium zucchini using a box grater and squeeze out excess moisture using a clean kitchen towel.
- In a large mixing bowl, combine the zucchini, almond flour, eggs, baking powder, garlic powder, onion powder, salt, and pepper. Mix gently until a dough forms.
- Divide the dough into 4-6 portions, roll each into a ball, and poke a hole in the center to shape them into bagels.
- If desired, sprinkle shredded cheese, sesame seeds, or poppy seeds on top of each bagel.
- Transfer the bagels to the baking tray and bake for 25-30 minutes, or until golden brown.
