Step-by-Step Instructions

  2. Combine chopped shrimp with mashed potatoes, herbs, and seasoning in a mixing bowl until well mixed.
  3. Shape the mixture into small patties about the size of a golf ball.
  4. Dip each patty in beaten eggs, then roll in breadcrumbs to coat.
  5. Fry croquettes in hot oil (around 350°F) until golden brown, about 3-4 minutes per side.
  6. Transfer fried croquettes to a plate lined with paper towels to absorb excess oil.
  7. Serve hot with aioli or tartar sauce.
